Easter is always a fun time for our family! My mom used to create these super fun Easter goodies and baskets and she’s passed the tradition on to me. It’s even more special to me now because it comes so near Bella’s birthday every year so we look forward to celebrating that too. While we usually join the Easter egg hunts at the country club we still make fun Easter goodies at home at too. One of my favorites is my mom’s Easter rice crispy eggs!
My mom makes the best rice crispy treats. Since I was a little girl I always looked forward to days when she’d make a batch for the house. They were the perfect combination of marshmallow stickiness and rice crispy goodness. Usually she makes them in plump squares like brownies (yummy!), but for Easter the other year she created them in egg form which was not only delicious but awesome fun too and now I look forward to making rice crispies eggs every year when Easter comes around.

RICE CRISPIES EGG TREATS
:: Ingredients ::
42 large marshmallows
6 cups of rice crispies
1/4 stick of butter
3) When the crispies are completely mixed in take the saucepan off the heat and get ready to mold them before they are cooled because once they are it becomes harder to manipulate them. So it may be a bit hot but you can use the spoon to spoon the mixture straight into the plastic eggs (pre-coated with butter or cooking spray to make sure the rice crispies don’t stick).
Once you’re done packing your crispies let them stand in the plastic egg containers for a little bit to cool. (On a side note: I love these plastic eggs! It’s like the colors were made just for PB&G!).
